Gluten Free Focaccia Bread 3-Ways

Makes 2 Breads

Ingredients:

>2/3 c coconut flour
>2/3 c brown rice flour
>2/3 c cornstarch
>1/2 c coconut flour
>1/2 c tapioca starch
>4 1/2 tsp yeast (2 standard packages)
>1 1/2 tsp xanthan gum
>2 tsp salt
>1 c warm water
>3 eggs
>1/4 olive oil
>3 tsp honey
>2 tsp lemon juice
>1 tsp black pepper

Flavour Additions:
>1 c chopped + pitted olives of your choice (Kalamata or Sicilian work best)
>1/2 c chopped fresh herbs (rosemary, oregano, basil)
>3 cloves garlic, minced
>1/4 c parmesan cheese, grated

OR

>1 c chopped sundried tomatoes
>1 c chopped fresh basil
>4 cloves garlic, minced
>1/4 c parmesan cheese, grated

OR

>6-8 cloves garlic, minced
>3/4 c parmesan cheese, grated

Preparation:

1Preheat oven to 425°F. Line a large baking sheet with parchment paper.
Combine flours, yeast, xanthan gum and salt in a large bowl. Stir well with a whisk to ensure all ingredients are mixed.

2Whisk water, eggs, olive oil, honey and lemon juice in a separate bowl, until well combined.

3Beat wet and dry ingredients together in large bowl, with an electric mixer at medium speed. Batter should be thick, smooth and slightly moist. Add more water one tsp at a time if necessary. Scrap sides of the bowl with a spatula as needed.

4Divide dough into two equal portions. Use damp hands to spread each portion into a 6-8 inch round or square, approximately 1/3 to 1/2 inch thick.

5Let dough rest for 10 minutes prior to baking. Before putting in the oven, drizzle the tops with olive oil and sprinkle with salt and pepper.

6Bake for 18 minutes or until golden brown. Cool for 5 minutes prior to slicing.
